How to make it

  • In a large sauce pan, brown garlic in oil.
  • Add onions, celery, leeks and sauté until tender.
  • Add chicken broth and bring to a boil.
  • Reduce heat and add beer and heavy cream.
  • Pureé with hand-held blender.
  • Strain and adjust seasoning; adding salt and pepper.
  • Return to saucepan.
  • Add cheese and heat until cheese is melted, stirring so it doesn't burn.
  • Serve with good crusty bread.
  • ***Breath mints as dessert are probably a good idea***
