Creamy Gruyere and Garlic Soup

- 1/8 cup of olive oil shopping list
- 10 cloves of garlic shopping list
- 1 onion, chopped shopping list
- 3 stalks celery, diced shopping list
- 1 bottom part of leek, chopped shopping list
- 4 cups chicken broth shopping list
- 6-8 ounces dark beer shopping list
- 1 cup heavy cream shopping list
- 1-1/2 cups Gruyére cheese, grated shopping list
How to make it
- In a large sauce pan, brown garlic in oil.
- Add onions, celery, leeks and sauté until tender.
- Add chicken broth and bring to a boil.
- Reduce heat and add beer and heavy cream.
- Pureé with hand-held blender.
- Strain and adjust seasoning; adding salt and pepper.
- Return to saucepan.
- Add cheese and heat until cheese is melted, stirring so it doesn't burn.
- Serve with good crusty bread.
- ***Breath mints as dessert are probably a good idea***
