How to make it

  • Beat eggs with catsup then add bread crumbs.
  • Add remaining ingredients except cheese, mushrooms and tomato juice to the mixture.
  • Mix with hands.
  • It is important that the mixture is firm so balls will hold their shape.
  • If necessary add more bread crumbs to achieve proper consistency.
  • Take 1/2 cup of mixture and form into a ball.
  • Make a hole in the center with your thumb.
  • Fill with a cube of cheddar cheese and mushrooms then cover hole and fry in oil to brown.
  • Place in a baking dish and bake covered at 350 for 1 hour.
  • Remove from oven and drain grease from baking dish.
  • Cover meatballs with tomato juice and return to the oven until tomato juice is warm.
