How to make it

  • Preheat oven to 350 degrees.
  • Grease cookie sheets (or line with parchment paper).
  • Combine flour, baking soda, baking powder, cinnamon, and salt in bowl and set aside.
  • In separate bowl, beat sugar and butter in large mixer bowl until well blended.
  • Beat in pumpkin, egg, and vanilla with mixer on medium speed until smooth.
  • Gradually add in flour mixture, beating well with each addition.
  • Drop dough by rounded spoonfuls onto cookie sheets.
  • Bake 15-18 minutes until edges are firm but not brown.
  • Allow cookies to cool before glazing.
  • For glaze, combine sifted powdered sugar, milk, butter, and vanilla, and stir until smooth.
  • Drizzle glaze over cooled cookies.
  • Enjoy! :)

    I made these and they were perfect! I love soft cookies! The only change I made was not to glaze them and to use this recipe in place of the 1 cup of pumpkin...http://www.grouprecipes.com/43175/pumpkin-butter.html

    This made the cookies taste like ginger/pumpkin cookies because of the large amount of ginger in the pumpkin butter recipe. These cookies were so very good! I added a photo!
