Soft Glazed Pumpkin Cookies

- 2 1/2 cups all-purpose flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 2 tsp ground cinnamon (*OR* 1 tsp cinnamon and 1/2 tsp nutmeg if preferred) shopping list
- 1/2 tsp salt shopping list
- 1 1/2 cups sugar shopping list
- 1/2 cup butter, softened shopping list
- 1 cup pumpkin shopping list
- 1 large egg shopping list
- 1 tsp vanilla shopping list
- For glaze: shopping list
- 2 cups sifted Confectioner's (powdered) sugar shopping list
- 3 Tbsp milk (2% or whole) shopping list
- 1 Tbsp melted butter shopping list
- 1 tsp vanilla shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease cookie sheets (or line with parchment paper).
- Combine flour, baking soda, baking powder, cinnamon, and salt in bowl and set aside.
- In separate bowl, beat sugar and butter in large mixer bowl until well blended.
- Beat in pumpkin, egg, and vanilla with mixer on medium speed until smooth.
- Gradually add in flour mixture, beating well with each addition.
- Drop dough by rounded spoonfuls onto cookie sheets.
- Bake 15-18 minutes until edges are firm but not brown.
- Allow cookies to cool before glazing.
- For glaze, combine sifted powdered sugar, milk, butter, and vanilla, and stir until smooth.
- Drizzle glaze over cooled cookies.
- Enjoy! :)
