Rigatoni With Squash Recipe
This is a northern Italian dish. Very easy and tasty, it makes a good starter for a multi course meal.

Ingredients
  • 3/4 Lb rigatoni pasta
  • 1 lb butternut squash
  • 3/4 stick butter (3 oz)
  • 1 Tbsp Extra_virgin_olive_oil
  • 2 oz freshly grated Parmigiano Reggiano
  • Salt, pepper and freshly grated nutmeg to taste

Directions
  1. Peel and dice squash into 1/4 inch pieces.
  2. In a large saucepan, saute squash in oil and butter until soft., stirring often. Season with salt and pepper and a pinch of nutmeg. (I usually add more)
  3. Meanwhile bring plenty of salted water to a rolling boil.
  4. Cook pasta al dente according to package directions.
  5. Drain pasta and put back in the pasta post.
  6. Add squash saute with all the juices to the pasta. Add parmigiano and stir for few minutes over low heat until cheese has melted.
  7. Serve hot.

Interesting combination! I've eaten yellow or zucchini squash with pasta many times, but never thought of using a winter squash with pasta. Sounds delicious!
