Rigatoni With Squash

- 3/4 Lb rigatoni pasta shopping list
- 1 lb butternut squash shopping list
- 3/4 stick butter (3 oz) shopping list
- 1 Tbsp Extra_virgin_olive_oil shopping list
- 2 oz freshly grated parmigiano Reggiano shopping list
- salt, pepper and freshly grated nutmeg to taste shopping list
How to make it
- Peel and dice squash into 1/4 inch pieces.
- In a large saucepan, saute squash in oil and butter until soft., stirring often. Season with salt and pepper and a pinch of nutmeg. (I usually add more)
- Meanwhile bring plenty of salted water to a rolling boil.
- Cook pasta al dente according to package directions.
- Drain pasta and put back in the pasta post.
- Add squash saute with all the juices to the pasta. Add parmigiano and stir for few minutes over low heat until cheese has melted.
- Serve hot.
