How to make it

  • Peel and dice squash into 1/4 inch pieces.
  • In a large saucepan, saute squash in oil and butter until soft., stirring often. Season with salt and pepper and a pinch of nutmeg. (I usually add more)
  • Meanwhile bring plenty of salted water to a rolling boil.
  • Cook pasta al dente according to package directions.
  • Drain pasta and put back in the pasta post.
  • Add squash saute with all the juices to the pasta. Add parmigiano and stir for few minutes over low heat until cheese has melted.
  • Serve hot.

    Interesting combination! I've eaten yellow or zucchini squash with pasta many times, but never thought of using a winter squash with pasta. Sounds delicious!
