Ingredients
  • 1/4 cup sliced white onion
  • 2 tablespoons shortening
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 16 ounce can tomatoes
  • 1/2 pound bologna cut into cubes
  • 3/4 cup cooked diced carrots
  • 3/4 cup cooked cut green beans
  • Bologna Biscuit Dough (below)
  • Bologna Biscuit Dough:
  • 1 cup flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons shortening
  • 1/4 pound bologna cut into 1/4" cubes
  • 1/2 cup milk

Directions
  1. Heat oven to 425.
  2. In large skillet cook and stir onion in shortening until tender.
  3. Remove from heat.
  4. Stir in flour, salt and pepper.
  5. Cook over low heat stirring until mixture is bubbly.
  6. Remove from heat and stir in tomatoes.
  7. Heat to boiling stirring constantly.
  8. Boil and stir 1 minute.
  9. Stir in bologna, carrots and beans then heat to boiling.
  10. Pour into ungreased baking pan and place in oven.
  11. Prepare dough and drop 9 tablespoonfuls dough on hot vegetable mixture.
  12. Bake uncovered 30 minutes.
  13. Dough:
  14. Measure dry ingredients into bowl.
  15. Cut in shortening until mixture looks like meal.
  16. Stir in bologna and milk.

As a kid bologna was all I would eat! That and cold hotdogs.. And your parents in the Navy, at that time they made little money... you ate CHEAP!

I too was a Navy brat and know exactly what you mean about eating cheap, but we always had bologna in the refrigerator and I was always a happy kid as a result. I loved bologna and still do. Yummy. I eat jalapeno bologna now, but as a kid, good old fashioned bologna and mayonnaise sandwiches or fried bologna and egg sandwiches. Yummers.
