How to make it

  • In a large saucepan, heat oil and saute onions and garlic for a couple of minutes on low.
  • Stir in ginger and cinnamon. Saute another minute.
  • Add broth and nectar, bring to a boil. Stir in couscous.
  • Cover, remove from heat and set aside for 5 to 10 minutes, or until liquid is absorbed.
  • Uncover and stir in chicken, mango and snow peas.
  • Cover and heat for 3 to 5 minutes or until very warm.
  • Sprinkle with salt and pepper.
  • Great with wheat or white Mediterranean Flat Bread and a nice salad.

    Are you using Lebanese style (Israeli) couscous or Moroccan ? Either way this will be good.
