Mango and Chicken Couscous

- 2 tablespoons oil shopping list
- 1 small onion, finely chopped shopping list
- 1 1/2 teaspoons fresh garlic, minced (about 3 cloves) shopping list
- 1/4 teaspoon ground ginger shopping list
- 3/4 teaspoon ground cinnamon shopping list
- 1 1/2 cups chicken broth, I prefer low sodium shopping list
- 1 1/2 cups mango nectar shopping list
- 1 3/4 cups uncooked couscous shopping list
- 2 cups cooked chicken, diced into bite-size pieces shopping list
- 2 ripe mangoes, peeled and diced into bite-size pieces (about 1 1/2 to 2 cups) shopping list
- 1 cup fresh snow peas shopping list
- salt and pepper to taste shopping list
How to make it
- In a large saucepan, heat oil and saute onions and garlic for a couple of minutes on low.
- Stir in ginger and cinnamon. Saute another minute.
- Add broth and nectar, bring to a boil. Stir in couscous.
- Cover, remove from heat and set aside for 5 to 10 minutes, or until liquid is absorbed.
- Uncover and stir in chicken, mango and snow peas.
- Cover and heat for 3 to 5 minutes or until very warm.
- Sprinkle with salt and pepper.
- Great with wheat or white Mediterranean Flat Bread and a nice salad.
