I have not made this cake, but have had it in my recipe files for a very long time. It comes from an estate in Dallas, Texas. Enjoy

Ingredients
  • 1 cup shortening
  • 1-3/4 cups sugar
  • 2 eggs unbeaten
  • 1 cup cocoa
  • 1-1/2 cups hot water
  • 2 cups flour
  • 1-1/2 teaspoons baking soda
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • Frosting:
  • 2 cups sifted powdered sugar
  • 4 tablespoons light cream
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Directions
  1. Cream shortening and sugar then add eggs and beat well.
  2. Combine flour, soda, powder and salt and sift twice.
  3. Mix together the cocoa and water.
  4. Add flour mixture and cocoa mixture alternately to batter.
  5. Mix well with spoon or electric mixer then add vanilla and continue mixing.
  6. Pour into a greased angel food cake pan and bake at 375 for 45 minutes.
  7. Allow to cool completely before removing from pan.
  8. To make frosting combine all frosting ingredients then spread over cooled cake.

I've made this cake but not the icing. It is rich and deep chocolate!! Delightful, but I think icing it may be overkill. I also cut the shortening to 3/4c and add in 1/3c of apple butter... keeps it moister longer.


This sounds fantastic, I'll keep Jo Jo ba's tips in mind also.. thanks for the great post!
