Midnight Cake

- 1 cup shortening shopping list
- 1-3/4 cups sugar shopping list
- 2 eggs unbeaten shopping list
- 1 cup cocoa shopping list
- 1-1/2 cups hot water shopping list
- 2 cups flour shopping list
- 1-1/2 teaspoons baking soda shopping list
- 1-1/2 teaspoons baking powder shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon vanilla extract shopping list
- Frosting: shopping list
- 2 cups sifted powdered sugar shopping list
- 4 tablespoons light cream shopping list
- 1 teaspoon vanilla shopping list
- 1/4 teaspoon salt shopping list
How to make it
- Cream shortening and sugar then add eggs and beat well.
- Combine flour, soda, powder and salt and sift twice.
- Mix together the cocoa and water.
- Add flour mixture and cocoa mixture alternately to batter.
- Mix well with spoon or electric mixer then add vanilla and continue mixing.
- Pour into a greased angel food cake pan and bake at 375 for 45 minutes.
- Allow to cool completely before removing from pan.
- To make frosting combine all frosting ingredients then spread over cooled cake.

I've made this cake but not the icing. It is rich and deep chocolate!! Delightful, but I think icing it may be overkill. I also cut the shortening to 3/4c and add in 1/3c of apple butter... keeps it moister longer.
