Quiche

- 2 c macaroni, uncooked shopping list
- 6-8 slices bacon, chopped shopping list
- 2 c American cheese, shredded shopping list
- 2 c monterey jack cheese, shredded shopping list
- 2 c soft bread cubes shopping list
- 1 med onion, chopped fine shopping list
- 1 sm green bell pepper, chop fine shopping list
- 4 eggs, separated shopping list
- 2 c milk shopping list
- 1 t salt shopping list
- 6 – 8 drops hot sauce shopping list
- red salsa (optional) shopping list
How to make it
- Preheat oven to 325 degrees.
- Prepare macaroni according to package directions; drain.
- In a medium skillet, cook bacon until crisp; drain.
- In large bowl, combine macaroni, bacon, cheeses, bread cubes, onion and green pepper.
- In a medium bowl, beat together egg yolks, milk, salt and hot sauce.
- Add to macaroni mixture; mix well.
- In a large bowl, beat egg whites until stiff.
- Fold into macaroni mixture.
- Pour into buttered 12 in quiche dish or 13x9 in baking dish.
- Place a shallow baking dish with 1 – 2 inches water on lowest rack of 325 degree oven.
- Place quiche on center rack.
- Bake until set and knife inserted in center comes out clean, about 1 hour.
- Let stand 5 minutes before cutting.
- Garnish as desired.
- Serve with salsa.
- Refrigerate leftover.
- Makes 10-12 servings.
