Ingredients
  • DESCRIPTION OF PANCAKE FASHION STATEMENT
  • A tall, large stack of pancakes, layered with jams, jellies, or preserves, and then spread with a beautiful, swirled meringue, that has been slightly browned in the oven. It will look like a many layered cake that has been iced in meringue!
  • WHAT YOU WILL NEED+++++++++THIS IS REALLY SIMPLE!
  • Favorite pancake recipe prepared and cooked, making sure the size of each pancake is about the size of a large dessert plate
  • Assortment colorful jams, jellies, preserves, could include orange marmalade, red plum, apricot, cherry, strawberry, etc
  • MERINGUE

Directions
  1. Now, here is the fun part - the PANCAKE FASHION STATEMENT is up to you!
  2. This is like icing layers of a cake!
  3. Place the 1st pancake on a BAKING SHEET
  4. Spread the top of pancake with a thin layer, your choice of jam, jelly, preserves, spreading to the edges
  5. Top with another pancake, then spread another with choice of jam, jelly, preserves, and so on......
  6. Continue layering until the desired height is reached, spreading the top pancake with jam, jelly, or preserves
  7. It will look like a tall cake, but again make sure it will slide easily into the oven for the meringue to brown
  8. Make as many layers as you can, and as much meringue as you want
  9. THIS IS SO MUCH FUN!! AND IT IS GOING TO BE BEAUTIFUL!!
  10. Now prepare the meringue
  11. This is the final "dressing" which will be spread over the entire pancake stack
  12. BASIC MERINGUE RECIPE (see NOTE at bottom)
  13. 3 egg whites
  14. 1/4 teaspoon cream of tartar
  15. 6 tablespoons sugar ( 2 tablespoons per egg white)
  16. Place egg whites is mixer bowl, start beating until foamy, then add cream of tartar
  17. Beat on high speed until standing in soft peaks
  18. While beating on high, add sugar a little at a time, until satiny, high peaks form
  19. It is now ready to "spread"
  20. Spread the layered pancake stack with the meringue, making beautiful swirls!
  21. Place in oven just to brown slightly
  22. REMOVE FROM OVEN CAREFULLY
  23. Cool slightly
  24. WITH A LARGE SPATULA, transfer from baking sheet to serving dish
  25. THE PRESENTATION IS BEAUTIFUL ON A FOOTED CAKE STAND
  26. Place a serrated knife near so guests can "slice" in wedges like a cake
  27. NOTE: Double recipe to get the desired amount of meringue to cover the desired stack of pancakes
