How to make it

  • Now, here is the fun part - the PANCAKE FASHION STATEMENT is up to you!
  • This is like icing layers of a cake!
  • Place the 1st pancake on a BAKING SHEET
  • Spread the top of pancake with a thin layer, your choice of jam, jelly, preserves, spreading to the edges
  • Top with another pancake, then spread another with choice of jam, jelly, preserves, and so on......
  • Continue layering until the desired height is reached, spreading the top pancake with jam, jelly, or preserves
  • It will look like a tall cake, but again make sure it will slide easily into the oven for the meringue to brown
  • Make as many layers as you can, and as much meringue as you want
  • THIS IS SO MUCH FUN!! AND IT IS GOING TO BE BEAUTIFUL!!
  • Now prepare the meringue
  • This is the final "dressing" which will be spread over the entire pancake stack
  • BASIC MERINGUE RECIPE (see NOTE at bottom)
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons sugar ( 2 tablespoons per egg white)
  • Place egg whites is mixer bowl, start beating until foamy, then add cream of tartar
  • Beat on high speed until standing in soft peaks
  • While beating on high, add sugar a little at a time, until satiny, high peaks form
  • It is now ready to "spread"
  • Spread the layered pancake stack with the meringue, making beautiful swirls!
  • Place in oven just to brown slightly
  • REMOVE FROM OVEN CAREFULLY
  • Cool slightly
  • WITH A LARGE SPATULA, transfer from baking sheet to serving dish
  • THE PRESENTATION IS BEAUTIFUL ON A FOOTED CAKE STAND
  • Place a serrated knife near so guests can "slice" in wedges like a cake
  • NOTE: Double recipe to get the desired amount of meringue to cover the desired stack of pancakes
