Pork Chops With Black Beans Recipe
This dish is right out of one of my Better Homes and Gardens Cook Books. We love it and it is so easy. I serve this with steamed broccoli or glazed carrots.

Ingredients
  • 4 pork chops, but 3/4 inch thick
  • 1/8 tsp. ground red pepper
  • 1/4 tsp. garlic powder
  • 1 Tb. olive oil or cooking oil
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 C. salsa (I love Target's Archer Farms Original Salsa)
  • 1 Tb. snipped fresh cilantro or flat leaf parsley
  • salt and black pepper to taste

Directions
  1. Trim fat from meat.
  2. Rub red pepper, black pepper, salt and garlic powder onto chops.
  3. In a skillet, cook chops in hot oil over medium-high heat until brown, about 2 min. per side.
  4. Remove and drain off fat.
  5. In the same skillet, combine beans, salsa and cilantro or parsley.
  6. Add chops.
  7. Bring to a boil.
  8. Reduce heat and simmer, covered, for 5 to 6 minutes or till no pink remains and juices run clear.
  9. To serve, top bean mixture with chops.
