When I quit eating meat, mom would make stuffed shells for me all the time. I like these a lot.

Ingredients
  • 20 jumbo macaroni shells (7 ounce pkg)
  • 2 tbsp of chopped onion
  • 2 cups of cream style cottage cheese
  • 1 slightly beaten egg
  • 1/4 tsp dried oregano
  • 3 tbsp of oil
  • 1/4 tsp of salt
  • 1 1/2 cups of milk
  • 1/4 cup of parmesan cheese
  • 1/2 cup chopped celery
  • 2 tbsp of oil
  • 1 10 ounce of package frozen spinach, defrosted and drained
  • 1/2 salt
  • 2 tbsp of chopped onion
  • 3 tbsp of flour
  • 3/4 cup of chicken broth

Directions
  1. Cook macaroni shells according to package directions; drain. Make sure shell are firm enough to stuff without tearing.
  2. Cook celery and 2 tbsp of onion in 2 tbsp of oil until tender.
  3. Combine onion mixture, cottage cheese, spinach, egg, salt, oregano and a dash of pepper, mix well.
  4. Fill shells with the spinach mixture.
  5. In sauce pan, cook remaining 2 tbsp of onion in 3 tbsp of oil and blend in flour, salt and dash of pepper, blend in the milk and stock.
  6. Cook until thick and bubbly.
  7. Pour half of the sauce in a 13x9x2 baking dish.
  8. Arrange shells in sauce. Bake covered 375 for fifteen minutes.
  9. Drizzle on remaining sauce and bake for 10 minutes more uncovered.
