Shells Florentine

- 20 jumbo macaroni shells (7 ounce pkg) shopping list
- 2 tbsp of chopped onion shopping list
- 2 cups of cream style cottage cheese shopping list
- 1 slightly beaten egg shopping list
- 1/4 tsp dried oregano shopping list
- 3 tbsp of oil shopping list
- 1/4 tsp of salt shopping list
- 1 1/2 cups of milk shopping list
- 1/4 cup of parmesan cheese shopping list
- 1/2 cup chopped celery shopping list
- 2 tbsp of oil shopping list
- 1 10 ounce of package frozen spinach, defrosted and drained shopping list
- 1/2 salt shopping list
- 2 tbsp of chopped onion shopping list
- 3 tbsp of flour shopping list
- 3/4 cup of chicken broth shopping list
How to make it
- Cook macaroni shells according to package directions; drain. Make sure shell are firm enough to stuff without tearing.
- Cook celery and 2 tbsp of onion in 2 tbsp of oil until tender.
- Combine onion mixture, cottage cheese, spinach, egg, salt, oregano and a dash of pepper, mix well.
- Fill shells with the spinach mixture.
- In sauce pan, cook remaining 2 tbsp of onion in 3 tbsp of oil and blend in flour, salt and dash of pepper, blend in the milk and stock.
- Cook until thick and bubbly.
- Pour half of the sauce in a 13x9x2 baking dish.
- Arrange shells in sauce. Bake covered 375 for fifteen minutes.
- Drizzle on remaining sauce and bake for 10 minutes more uncovered.
