How to make it

  • Cook macaroni shells according to package directions; drain. Make sure shell are firm enough to stuff without tearing.
  • Cook celery and 2 tbsp of onion in 2 tbsp of oil until tender.
  • Combine onion mixture, cottage cheese, spinach, egg, salt, oregano and a dash of pepper, mix well.
  • Fill shells with the spinach mixture.
  • In sauce pan, cook remaining 2 tbsp of onion in 3 tbsp of oil and blend in flour, salt and dash of pepper, blend in the milk and stock.
  • Cook until thick and bubbly.
  • Pour half of the sauce in a 13x9x2 baking dish.
  • Arrange shells in sauce. Bake covered 375 for fifteen minutes.
  • Drizzle on remaining sauce and bake for 10 minutes more uncovered.
