Raspberry Balsamic Chicken

- 1 tablespoon vegetable oil shopping list
- 1/2 cup red onion, finely chopped shopping list
- 1/2 teaspoon dried thyme shopping list
- 1/2 teaspoon salt, divided shopping list
- 4 boneless, skinless chicken breast halves shopping list
- 1/3 cup seedless raspberry preserves shopping list
- 2 tablespoons balsamic vinegar shopping list
- 1/4 teaspoon ground black pepper shopping list
How to make it
- In large skillet, heat oil over medium-high heat.
- Add onion and saute 5 minutes, stirring.
- Sprinkle chicken breasts with thyme and 1/4 teaspoon salt.
- Add chicken to skillet and saute 6 minutes on each side or until chicken is cooked through.
- Remove chicken from skillet and keep warm.
- Reduce heat to medium-low.
- To skillet, add 1/4 teaspoon salt, preserves, vinegar and pepper.
- Cook, stirring, until smooth and heated through.
- Spoon over chicken.

I have a recipe very similar to this--it is soooo easy to make and the results are incredibly good. Everyone thinks you are a true gourmet chef! You have some nice recipes here. My kind of guy!
