Ingredients

How to make it

  • In large skillet, heat oil over medium-high heat.
  • Add onion and saute 5 minutes, stirring.
  • Sprinkle chicken breasts with thyme and 1/4 teaspoon salt.
  • Add chicken to skillet and saute 6 minutes on each side or until chicken is cooked through.
  • Remove chicken from skillet and keep warm.
  • Reduce heat to medium-low.
  • To skillet, add 1/4 teaspoon salt, preserves, vinegar and pepper.
  • Cook, stirring, until smooth and heated through.
  • Spoon over chicken.

    This sounded so good when I first saw it, I immediately went out and bought the red raspberry preserves. (Although I did buy the seeded.) I'm making it right now. I had used my saladmaster skillet to cook the chicken a bit, but was a tad early, so I turned it on low. Then I decided while baking the herb potatoes I'm making, to put the breast meat in a pyrex 9 x 13 pan and pour the raspberry sauce over top of the chicken. I covered with tin foil and I'm baking it at 350 for a half an hour. Hope it doesn't dry the chicken out, but it certainly looks delicious!

    Once again, I'll be taking a picture of it tonight when it's done.

    I have a recipe very similar to this--it is soooo easy to make and the results are incredibly good. Everyone thinks you are a true gourmet chef! You have some nice recipes here. My kind of guy!
