A very traditional asian foods appetizer takes a bit of time to assemble, however if you are into asian cooking this is so worth the time.

Ingredients
  • Prep and cooking time does not include resting time for the dough.
  • 2 cups all purpose flour
  • 3/4 cup plus 2 tablespoons of boiling water
  • 1/2 cup very finely chopped napa cabbage
  • 8 oz lean ground pork
  • 2 tablespoons finely chopped water chestnuts
  • 1 green onion finely chopped
  • 1 and 1/2 teaspoons soy sauce
  • 1 and 1/2 teaspoons dry sherry (optional)
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1 and 1/2 teaspoons cornstarch
  • 2 tablespoons vegatable oil
  • 3/4 cup chicken broth

Directions
  1. Place flour in a large bowl
  2. make a well in the center of flour
  3. pour bowling water into the well in the flour stirring with a wooden spoon until the dough begins to hold together
  4. knead dough on a lightly floured surface until smooth and stainy about 5 minutes
  5. cover and let rest 30 minutes
  6. While dough is resting prepare filling
  7. squeeze cabbage to remove as much moisture as possible
  8. add pork, water chestnuts, onion, soy sauce, sherry, ginger cornstarch, sesame oil and sugar mix well
  9. divide dough into 2 equal portions
  10. cover one portion with plastic wrap while you work with the other
  11. roll dough to 1/8 th inch thickness on lightly floured surface
  12. cut out 3 inch circles
  13. place a rounded teaspoon of filling mixture in the center of dough circle
  14. lightly moisten the edges of the circle with water
  15. fold in half over the filling
  16. starting at one end pinch dough together making 4 pleats along the edge. cover finished pot stickers while you make the rest of the dumplings
  17. (pot stickers may now be cooked immediatly, refrigerated for up to 4 hours, or frozen in a sealed plastic bag until needed)
  18. Heat 1 tablespoon of oil in large nonstick skillet
  19. set 1/2 of the pot stickers in pan seam side down ( if frozen no need to thaw)
  20. cook until bottoms are a golden brown about 5 or 6 minutes
  21. pour 1/3 cup chicken broth into skillet
  22. cover tightly reduce heat and cook until all the liquid is absorbed about 10 minutes for thawed 15 for frozen
  23. repeat for remaining pot stickers
  24. serve pot stickers with your favorited dipping sauces
