How to make it

  • Place flour in a large bowl
  • make a well in the center of flour
  • pour bowling water into the well in the flour stirring with a wooden spoon until the dough begins to hold together
  • knead dough on a lightly floured surface until smooth and stainy about 5 minutes
  • cover and let rest 30 minutes
  • While dough is resting prepare filling
  • squeeze cabbage to remove as much moisture as possible
  • add pork, water chestnuts, onion, soy sauce, sherry, ginger cornstarch, sesame oil and sugar mix well
  • divide dough into 2 equal portions
  • cover one portion with plastic wrap while you work with the other
  • roll dough to 1/8 th inch thickness on lightly floured surface
  • cut out 3 inch circles
  • place a rounded teaspoon of filling mixture in the center of dough circle
  • lightly moisten the edges of the circle with water
  • fold in half over the filling
  • starting at one end pinch dough together making 4 pleats along the edge. cover finished pot stickers while you make the rest of the dumplings
  • (pot stickers may now be cooked immediatly, refrigerated for up to 4 hours, or frozen in a sealed plastic bag until needed)
  • Heat 1 tablespoon of oil in large nonstick skillet
  • set 1/2 of the pot stickers in pan seam side down ( if frozen no need to thaw)
  • cook until bottoms are a golden brown about 5 or 6 minutes
  • pour 1/3 cup chicken broth into skillet
  • cover tightly reduce heat and cook until all the liquid is absorbed about 10 minutes for thawed 15 for frozen
  • repeat for remaining pot stickers
  • serve pot stickers with your favorited dipping sauces

    I've had my hand at homemade egg rolls, steamed pork dumplings, and even sushi....I look forward to making these, as most pre-made ones aren't - shall we say - as fresh'n'good as they COULD be??? Thanks for the post, Youtoo!
