Vegan Gingerbread Recipe
Another allergy-safe recipe that was passed along to me from a friend who has dealt with allergies similar to those my kids have. Mmmm...gingerbread!

Ingredients
  • 1 c. sorghum or molasses
  • 1/2 c. melted margarine or oil
  • 2 tsp. ginger
  • 2 c. flour
  • 1/2 tsp. salt
  • 1 tsp. soda (in 1 c. hot water)

Directions
  1. Beat together molasses and margarine, then beat in flour, ginger, and salt. Beat in soda water about 1/3 cup at a time, till mixture is smooth. Pour into greased/floured 9x9" pan. Bake at 350 for 35-40 minutes.
