Poppy Seed-Honey Dressing

I found this in The New Joy of Cooking cookbook, and it has become known among friends as "How I get my kids to eat spinach." It's delicious on baby spinach with dried cranberries and slivered almonds.
Ingredients
- 1/4 cup honey shopping list
- 3 T. cider vinegar or other fruit vinegar (I use raspberry vinegar) shopping list
- 2 T. olive oil shopping list
- 1 small shallot, minced (I use dry shallots - you could also use regular dried minced onion) shopping list
- 2 tsp. Dijon or brown mustard shopping list
- 1 tsp. poppy seeds shopping list
- salt and pepper to taste shopping list
How to make it
- Shake all ingredients in a jar with a tight-fitting lid until well blended.

I absolutely loved this! I didn't have any shallot so I used a bit of minced yellow onion - probably about 1 Tbs. Also used a honey dijon I am particularly fond of right now and raspberry vinegar. No way I'd get 12 servings out of this in my house!...more
