Poppy Seed-Honey Dressing Recipe
I found this in The New Joy of Cooking cookbook, and it has become known among friends as "How I get my kids to eat spinach." It's delicious on baby spinach with dried cranberries and slivered almonds.

Ingredients
  • 1/4 cup honey
  • 3 T. cider vinegar or other fruit vinegar (I use raspberry vinegar)
  • 2 T. olive oil
  • 1 small shallot, minced (I use dry shallots - you could also use regular dried minced onion)
  • 2 tsp. Dijon or brown mustard
  • 1 tsp. poppy seeds
  • salt and pepper to taste

Directions
  1. Shake all ingredients in a jar with a tight-fitting lid until well blended.
