Fairly Funnel Cake Recipe
No need to go to the fairs or carnivals for one of these! You can top pretty much anything, using your imagination. I like mine with warmed apple pie filling and vanilla bean ice cream.

Ingredients
  • 1 cup All-Purpose Flour
  • 3/4 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 Egg
  • 1 cup plus 1 tablespoon Milk
  • 2 tablespoons Sugar
  • Optional Toppings: powdered sugar, granulated sugar, cinnamon, warmed fruit filling, ice cream, whipped cream, syrups

Directions
  1. Combine dry ingredients in a medium bowl.
  2. In another bowl beat egg and milk. Add sugar, stir to dissolve.
  3. Add egg mixture to dry ingredients and beat with electric mixer on medium speed until smooth.
  4. Heat at least 1 inch of oil to 375 degrees in either a deep fryer or a skillet.
  5. To form cake, place one finger over hole at the bottom of a funnel.
  6. Carefully fill funnel with batter. Over hot oil remove finger and allow batter to go into oil, making circular or shapes with batter.
  7. Cook for 1 minute, using tongs or two spatulas turn cake.
  8. Cook until golden brown, about another minute.
  9. Drain on paper towels, Top with toppings. Serve warm.
