How to make it

  • Rinse pork chops quickly
  • Pat slightly dry
  • On a sheet of waxed paper, place enough flour to coat the number of chops to be fried
  • Salt the chops lightly
  • Press both sides of each salted chop in the flour
  • Generously sprinkle black pepper on both sides after flouring
  • I prefer a black iron skillet for the frying
  • Put enough Crisco in the skillet so that it will be about a 1/2 inch when melted
  • When grease is hot, put in the pork chops
  • Leave a little room between the chops while they are cooking
  • Do not turn until lightly browned on one side, then gently turn to the other side and lightly brown (my mother said, LEAVE THEM ALONE!:)
  • Then repeat again until golden brown
  • Remove from skillet, and place on platter lined with paper towel
  • Leaving a little grease and brown "goodie" crumbs in skillet, CAREFULLY pour off excess grease into a container
  • Place skillet back on burner, turning burner down a little
  • NOW, HERE COMES THE MILK GRAVY
  • Sprinkle several tablespoons of flour in bottom of skillet with the grease and "goodie crumbs"
  • With a metal spatula, stir the flour around with the grease, until you see a little color change
  • Have ready about 2 cups of milk, and pour into skillet, stirring constantly until it thickens to the desired consistency
  • Salt and pepper to taste
  • Pour into gravy bowl
  • Now don't forget the mashed potatoes!!
  • SOME PEOPLE LIKE THICK GRAVY, SOME PEOPLE LIKE THIN, I LIKE MINE IN-BETWEEN.....SO JUST STOP COOKING IT WHEN THE DESIRED CONSISTENCY IS ATTAINED

    Great instructions, and I agree the more black pepper the better. The only work out I get is grinding black pepper. LOL, great post and wonderful basic Southern to the core dinner. Love it, thanks, dear.
