Dinner Bell Fried Pork Chops Milk Gravy Recipe
The aroma of pork chops frying in the kitchen has to be one of the best dinner bells! Comfort food, this is it! Let us not forget the simple, tried and true. Fried pork chops, milk gravy, creamed potatoes, need I say more, I can smell them now.

Ingredients
  • 6 Pork Chops (or more)
  • Flour
  • Salt and Pepper to taste (I like lots of black pepper!)
  • Crisco vegetable shortening
  • NOTE: I once had a very experienced cook to tell me that CRISCO was the best, and I do believe it

Directions
  1. Rinse pork chops quickly
  2. Pat slightly dry
  3. On a sheet of waxed paper, place enough flour to coat the number of chops to be fried
  4. Salt the chops lightly
  5. Press both sides of each salted chop in the flour
  6. Generously sprinkle black pepper on both sides after flouring
  7. I prefer a black iron skillet for the frying
  8. Put enough Crisco in the skillet so that it will be about a 1/2 inch when melted
  9. When grease is hot, put in the pork chops
  10. Leave a little room between the chops while they are cooking
  11. Do not turn until lightly browned on one side, then gently turn to the other side and lightly brown (my mother said, LEAVE THEM ALONE!:)
  12. Then repeat again until golden brown
  13. Remove from skillet, and place on platter lined with paper towel
  14. Leaving a little grease and brown "goodie" crumbs in skillet, CAREFULLY pour off excess grease into a container
  15. Place skillet back on burner, turning burner down a little
  16. NOW, HERE COMES THE MILK GRAVY
  17. Sprinkle several tablespoons of flour in bottom of skillet with the grease and "goodie crumbs"
  18. With a metal spatula, stir the flour around with the grease, until you see a little color change
  19. Have ready about 2 cups of milk, and pour into skillet, stirring constantly until it thickens to the desired consistency
  20. Salt and pepper to taste
  21. Pour into gravy bowl
  22. Now don't forget the mashed potatoes!!
  23. SOME PEOPLE LIKE THICK GRAVY, SOME PEOPLE LIKE THIN, I LIKE MINE IN-BETWEEN.....SO JUST STOP COOKING IT WHEN THE DESIRED CONSISTENCY IS ATTAINED

Great instructions, and I agree the more black pepper the better. The only work out I get is grinding black pepper. LOL, great post and wonderful basic Southern to the core dinner. Love it, thanks, dear.
