LEMONY LIVER Recipe
MY GRANDAUGHTER ACTUALLY CLAPS HER HANDS WHEN I MENTION IT IS ON THE MENU! SHE IS ONLY 5! THE LEMON IS A DELICIOUS ALTERNATIVE TO THE USUAL FRIED ONIONS.

Ingredients
  • 1/2 -3/4 CUP OLIVE OIL
  • 2-4 GOOD SIZE PIECES BEEF LIVER
  • FLOUR FOR DREDGING
  • SALT, PEPPER TO TASTE
  • FRESH LEMONS

Directions
  1. POUR LIBERAL AMOUNT OF OLIVE OIL IN PAN(1/2- 3/4 CUP)
  2. HEAT OIL WHILE PREPARING LIVER
  3. ADD SALT AND PEPPER TO FLOUR.
  4. DREDGE BEEF LIVER IN FLOUR TO COAT WELL.
  5. FRY LIVER IN OIL TIL BROWN AND CRISPY.
  6. SQUEEZE LEMON OVER ALL IN PAN. PLACE LIVER AND JUICES ONTO PLATE
  7. SERVE WITH SALAD, YELLOW RICE, ADDITIONAL LEMON WEDGES AND A NICE LOAF OF CRUSTY, CHEWY ITALIAN BREAD FOR SOPPING UP JUICES!
  8. ENJOY!

Alterations


I used orange juice, some rosemary and lots of pepper. Only my little girl didn't like it (the texture), my boys loved it.
After cooking the liver I used the used oil/orange juice to fry up some onions and mushrooms with the dredging mix... very tasty.
I now love the 'dredge'ry of liver :)
