How to make it

  • Combine everything in a large plastic bag, close well. Marinate overnight.
  • Roast meat covered for 30 mins per pound of meat @400F, or until tender (be careful not to overcook)
  • Let rest 20 mins before slicing as thin as possible.

    So sorry, but I have to say, this cooking time must be WAY off. I reduced the time quite a bit because it seemed like too much time in the oven, and it STILL came out like cardboard. The marinade was lovely though...I may just try it in the broiler next time or on the grill. But I'm sorry to say, I won't be roasting it again.
