How to make it

  • Sift together flour, cocoa, baking powder, salt and cinnamon.
  • Cream shortening and sugar.
  • Add eggs, vanilla and potatoes.
  • Add flour mixture alternately with milk.
  • Stir in nuts.
  • Pour into greased 9x13 pan.
  • Bake at 350 degrees for 40-45 minutes.

    This is very similar to an old family recipe passed down to me. Very tasty and a Christmas tradition for many years.

    Marion Morash's "Victory Garden Cookbook" has a spice cake which uses mashed, cooked sweet potatoes. It is wonderful and moist. There seem to be precedents to this one!
