Plum Good Plum Dumplings

- 12 fresh plums shopping list
- 12 sugar cubes shopping list
- 3 T. butter shopping list
- 2 c. sifted all-purpose flour shopping list
- 2 c. riced, cold cooked potatoes shopping list
- 1 tsp. salt shopping list
- 2 eggs, well beaten shopping list
- 3/4 c. dry bread crumbs mixed with 3 T. melted butter shopping list
How to make it
- Remove pits from prunes carefully without breaking plums apart
- Replace pit with a sugar cube
- Cut batter into flour until mixture resembles coarse corn meal
- Add potatoes and salt
- Stir in eggs and knead dough on a lightly floured board until smooth
- Roll out dough 1/4 inch thick
- Cut dough into 3 inch squares
- Place 1 plum in each dough square
- Moisten edges of dough with water and pinch to enclose plum completely
- Roll the dumpling between floured hands until it is ball shaped
- Carefully drop dumplings into simmering water, only a few at a time
- Cook uncovered for 15 minutes
- Drain carefully and roll each dumpling in buttered crumbs

This is one of my favorite summer dishes!
In my family we serve it with the buttered bread crumbs poured over it. When done right it's sinful.eyecook in Ironwood loved it
