This pie is from the Island Born and Bred cookbook... This reminds me of an Icebox lemon Pie.....Enjoy!!!

Ingredients
- 1 can condensed milk
- 3 eggs, separated (save whites for meringue)
- 1/4 cup plus 1 tablespoon freshly squeezed, strained lemon juice
- 1 package section ritz crackers
Directions
- Stir together milk and egg yolks, vigorously, until well mixed.
- Add lemon juice and stir until smooth.
- Pour into Ritz cracker lined pie dish.
- Top with meringue.
- Bake at 400 degrees until golden brown.
