Ingredients

Part # 1

THE CUSTARD

2 T. cornstarch

6 c. milk

4 egg yolks

1/2 tsp. salt

2/3 c. sugar

1 cinnamon stick... or

1 tsp. vanilla extract

Part # 2

THE MERINGUE

4 egg whites

1 c. sugar

1 T. fresh lime juice

Directions

Part # 1

PREPARING THE CUSTARD

Dissolve cornstarch in 2 c. milk and mix with egg yolks

Combine rest of milk with remaining ingredients

Heat to boiling without stirring

Gradually add egg yolk mixture and cook, stirring rapidly with a wooden spoon until custard boils

Immediately pour into individual custard or dessert dishes

Part # 2

PREPARING THE MERINGUE

Beat egg whites until stiff

Gradually beat in sugar and lime juice

Beat with hand-held electric mixer on high speed until fluffy

Garnish custard and refrigerate until ready to serve

Serve cold
