Isla Flotante Recipe

Ingredients
  • Part # 1
  • THE CUSTARD
  • 2 T. cornstarch
  • 6 c. milk
  • 4 egg yolks
  • 1/2 tsp. salt
  • 2/3 c. sugar
  • 1 cinnamon stick... or
  • 1 tsp. vanilla extract
  • Part # 2
  • THE MERINGUE
  • 4 egg whites
  • 1 c. sugar
  • 1 T. fresh lime juice

Directions
  1. Part # 1
  2. PREPARING THE CUSTARD
  3. Dissolve cornstarch in 2 c. milk and mix with egg yolks
  4. Combine rest of milk with remaining ingredients
  5. Heat to boiling without stirring
  6. Gradually add egg yolk mixture and cook, stirring rapidly with a wooden spoon until custard boils
  7. Immediately pour into individual custard or dessert dishes
  8. Part # 2
  9. PREPARING THE MERINGUE
  10. Beat egg whites until stiff
  11. Gradually beat in sugar and lime juice
  12. Beat with hand-held electric mixer on high speed until fluffy
  13. Garnish custard and refrigerate until ready to serve
  14. Serve cold
