Ingredients
  • 12 Lg Banana peppers
  • 6- 6oz Boneless chicken breasts
  • 12oz Feta cheese
  • 12oz Shredded Mozzarela cheese
  • 2 dozen cherry tomatoes
  • 1Tb Fresh minced garlic
  • 3 Lg eggs
  • 1 Tb Kosher Salt
  • 1 tsp Fresh ground black pepper
  • Olive Oil
  • Romano Cheese

Directions
  1. Preheat oven to 380 degrees
  2. Grill chicken breasts being careful not to overcook
  3. Clean banana peppers removing seeds and casing
  4. Slice cherry tomatoes in half
  5. Mix feta, mozzarela, garlic, eggs, tomato, salt, and pepper
  6. Cut cooled chicken breasts into thin strips
  7. Stuff equal portions of chicken strips into peppers
  8. Stuff equal portions of cheese mixture into peppers on top of chicken
  9. Place peppers onto baking sheet
  10. Drizzle peppers with olive oil
  11. Sprinkle romano cheese over peppers (to your taste)
  12. Bake in oven 8-10 min (look for peppers to just begin browning)
  13. Note (you may have extra cheese mixture depending on pepper size)

This sounds really yummy! Will definately try it after the holidays. If there's anything we have here in Texas, it's good peppers. Can't find decent tomatoes though.

Alterations


I never follow anything to the letter so here are my changes: I marinated the chicken in a lemon vinagrette; I used fontina, asiago, ricotta and kasseri cheeses (needed to use them up) instead of mozzarella. Main change: I think 8-10 min is too short - I had to cook them for 35 min at 380 til they were soft and browned. Excellent! served with angel hair it was sooooo good! thanx
