Super Potato Casserole

- 3 pounds medium-sized potatoes shopping list
- 6 strips bacon, crisply cooked, drained and crumbled shopping list
- 4 scallions, thinly chopped shopping list
- 1/2 cup cream or milk shopping list
- 1 cup sour cream shopping list
- 1 cup shredded cheddar cheese shopping list
- salt and pepper to taste shopping list
- 1 cup seasoned croutons, slightly crushed shopping list
- 3 tablespoons butter, melted shopping list
How to make it
- Pour about 1-inch of water into a 3-quart pan.
- Add potatoes.
- Cover and bring to a boil over high heat.
- Reduce heat to medium and cook until tender when pierced, about 25 minutes.
- Drain well, peel and cut into 1/4-inch thick slices.
- Arrange half the slices in a greased shallow 2-quart casserole or baking dish.
- Top with half the bacon and half the scallions.
- In a small bowl, combine cream or milk and sour cream.
- Spread half the milk mixture over the onions.
- Sprinkle with 1/2 cup cheese.
- Season with salt and paper to taste.
- Repeat layers.
- Sprinkle croutons on top and drizzle with melted butter.
- Bake, uncovered, in a 350° oven for 30 minutes or until heated through.
