Rhubarb Custard Dessert Recipe
This is a quick and tastey way to fix rhubarb. Children love it topped w/ice cream...so do big kids!! Note: This may also be fixed as a pie using the crumb topping as the top crust.

  • Custard:
  • 1 1/2 C. sugar
  • 3 T. flour
  • 1/2 t. nutmeg
  • 1 T. butter
  • 2 eggs
  • Crumb Topping:
  • 1/2 C. sugar
  • 1/3 C. butter
  • 3/4 C. flour

Directions
  1. Place cut-up rhubarb in buttered baking dish. Blend flour, sugar, nutmeg, and butter. Add eggs to the sugar mix and beat until smooth. Pour over rhubarb. For the topping; blend sugar, flour, and butter until crumbly. Sprinkle over ruhbarb and custard. Bake at ~450 for 10 minutes, then lower heat to ~350 and continue baking for 30 minutes.
