Cucumber Kimchi Pickles Recipe
A spicy 24 hour pickle. Longer they stand- the better the flavor.Hand- me -down recipe. I double & triple this recipe and place them in a large glass jar in refrig.

Ingredients
  • 10 cucumbers, small & slender
  • 4 Tbsp. salt
  • 1 Tbsp. green onion, sliced finely
  • 1 Tbsp. chopped garlic (or more if desired)
  • 1 Tbsp. red pepper, powdered (cayenne)
  • 2 cups of water

Directions
  1. Cut each cucumber into 2 or 3 pieces
  2. Take a sharp knife and cut through sides of cucumber 3 times.
  3. salt them and let them stand for an hour or more.
  4. Mix garlic, onion, 1 tsp. salt and red pepper.
  5. Put this mixture into the slits in the cucumbers
  6. Place them in a jar and pour water (properly salted-brine) slowly to cover.
  7. Let it stand for a day or more before serving. ( I keep mine in refrig.)
