Cucumber Kimchi Pickles

- 10 cucumbers, small & slender shopping list
- 4 Tbsp. salt shopping list
- 1 Tbsp. green onion, sliced finely shopping list
- 1 Tbsp. chopped garlic (or more if desired) shopping list
- 1 Tbsp. red pepper, powdered (cayenne) shopping list
- 2 cups of water shopping list
How to make it
- Cut each cucumber into 2 or 3 pieces
- Take a sharp knife and cut through sides of cucumber 3 times.
- salt them and let them stand for an hour or more.
- Mix garlic, onion, 1 tsp. salt and red pepper.
- Put this mixture into the slits in the cucumbers
- Place them in a jar and pour water (properly salted-brine) slowly to cover.
- Let it stand for a day or more before serving. ( I keep mine in refrig.)
