  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 8 tbsp light brown sugar
  • 1 cup shortening
  • 1/2 cup diced mixed fruit
  • 2 tbsp butter
  • 1 1/2 tsp ground cinnamon
  • 6 small Golden delicious apples (6 oz each)
  • 1 large egg, beaten
  • 6 whole cloves

Directions
  1. In large bowl, mix flour, salt, and 2 tbsp brown sugar
  2. - With pastry blender or two knives used scissor fashion, cut in shortening until mixture resembles coarse crumbs.
  3. - Stir in 5 - 6 tbsp cold water until dough holds together, set aside.
  4. - In small bowl, mix dried fruit, butter, 4 tbsp brown sugar, and 1 tsp cinnamon.
  5. - Peel apples.
  6. - With melon baller, remove cores but do not go all the way through to bottom.
  7. - Press dried fruit mixture into cavities.
  8. - Preheat oven to 400 F.
  9. - Grease 15"x 10" jelly roll pan.
  10. - Reserve 1/3 cup dough.
  11. - On floured surface, with rolling pin, roll out remaining dough, using a ruler to help push and shape dough into 21" x 14" rectangle.
  12. - Cut dough into 6 - 7" squares.
  13. - On waxed paper, mix remaining 2 tbsp brown sugar and 1/2 tsp cinnamon.
  14. - Roll an apple in sugar mixture.
  15. - Center apple on a dough square; brush edges of dough with some beaten egg.
  16. - Bring dough up over top of apple.
  17. - Press to shape; seal edges.
  18. - Place dumpling in jelly roll pan.
  19. - Repeat with remaining apples, sugar mixture, and dough squares, and more beaten egg, to make 6 dumplings in all.
  20. - Roll reserved dough 1/4" thick.
  21. - Using knife, cut out as many leaves as possible; reroll scraps and cut out more leaves.
  22. - Score leaves with back of knife to make veins.
  23. - Brush dumplings with egg.
  24. - Press in cloves for stems.
  25. - Bake dumplings 35 - 40 minutes, until pastry is golden and apples are tender when pierced with knife.
