Stuffed Pork Chops Recipe
I'm not a big fan of mincemeat but when I was served this magnificant dish by a neighbor, I asked for the recipe and was very surprised to find mincemeat in it. This is very good. I also get asked for the recipe when I serve it.

Ingredients
  • 4 pork loin chops, cut 1-1/2 inch thick
  • 1 (6 oz.) can orange juice concentrate, thawed
  • 1/4 c. water
  • 2 tbsp. vinegar
  • 1 tbsp. vegetable oil
  • 2 bay leaves
  • 1/2 tsp. allspice
  • 1/4 tsp. onion powder
  • 1/2 c. prepared mincemeat
  • 1/2 c. finely chopped apples
  • 1/4 c. finely chopped onion

Directions
  1. Cut lengthwise slit in the side of each pork chop, being careful not to cut through the top, bottom, or sides.
  2. Arrange chops in shallow baking dish.
  3. Combine next 7 ingredients in saucepan.
  4. Bring to a boil over high flame, stirring constantly.
  5. Reduce flame; simmer 1 minute.
  6. Pour mixture over chops and refrigerate 8 hours or overnight, turning once.
  7. Combine mincemeat, apples, and onion.
  8. Remove chops from marinade.
  9. Reserve marinade.
  10. Press 1/4 cup apple mixture into each pork chops and secure edges with toothpicks.
  11. Preheat gas grill.
  12. Cook chops with cover down on low setting 45 minutes or until done, turning once.
  13. Baste occasionally, with reserved marinade.

Sounds extra delicious - just scouting out some interesting stuffed pork chop recipes here for tonight's cooking, and I so wish I had mincemeat on hand - yours here sounds like the tops - especially when comparing them to others...
