How to make it

  • Prepare stuffing:
  • In a wide frying pan, crumble the chorizo.
  • Add garlic,cumin and oregano.
  • Cook over medium-high heat, stirring frequently, until meat is browned. About 10 minutes.
  • Discard all but 2 tablespoons of fat.
  • Add spinach and mushrooms and cook.
  • Stir frequently and cook until the liquid has evaporated, about another 10 minutes.
  • Remove from heat and stir in soft bread crumbs, monterey jack chees, egg and salt to taste.
  • Set aside while preparing peppers.
  • Prepare chilies:
  • Wearing gloves, leave the stems on and split the chilies lengthwise.
  • Pull out seeds and ribs.
  • Fill chilies with stuffing.
  • Place side by side, stuffed side up, in a 10x15-inch rimmed pan.
  • Bake, uncovered, in a 400° until chiles are soft and lightly browned, about 25-30 minutes.
