How to make it

  • whack the garlic clove with anything heavy to just crush it slightly.
  • In a saucepan/wok heat the oil over a low to medium heat with the garlic clove in it for a couple of minutes.
  • Wash the greens don't bother drying them.
  • Roll the greens leaves up into a cigar shape and slice across them to make thin strips.
  • remove the garlic clove from the pan and add the greens, turn up the heat and stir fry them quickly, don't let them stick, keep stirring for 1 to 2 minutes or until they're wilted.
  • Tip the greens and oil into a oven proof dish.
  • tear up the mozzarella and lay roughly on top of the greens pour over a little mozzarella liquid.
  • Place in oven for 10 minutes at a high heat or grill until the mozzarella is bubbling.
  • Serve

    If you want to turn this into a quick main meal you could add any or all of the following:
    Bacon, fried Onions, ham, other cheeses. Experiment and enjoy I know it's simple but it's so much more than the sum of it's parts.
