Chicken Corn Soup Recipe
This is a recipe I obtained from my catering friend who often serves this at functions he caters. I love the combination of herbs, chicken and corn in the recipe. I make this often throughout the winter and always enjoy every bite.

Ingredients
  • 2 lbs. cut up chicken
  • 5 c. water
  • 1 med. onion, chopped
  • 2 tbsp. chopped parsley
  • 1/2 c. chopped celery
  • 2 c. corn
  • Salt and pepper
  • 1 c. flour
  • 1 egg, beaten
  • 1/4 c. milk

Directions
  1. Simmer chicken in boiling water.
  2. Remove bones and skin.
  3. Strain the stock.
  4. Return to pot.
  5. Add onions, celery and corn.
  6. Simmer until vegetables are tender.
  7. Mix flour with egg and milk.
  8. Rub mixture with fork until it crumbles.
  9. Drop crumbs in soup.
  10. Cook 10 more minutes covered.
