How to make it

  • 1 Place coconut milk,lemon grass,chilli & ginger in Wok,bring to the boil.Turn to low heat,simmer 3 mins.
  • 2 Add mussels cover with lid simmer further4-5mins.When opened they are ready. Remove mussels & keep warm
  • 3 Bring remaining liquid back to boil.Add spring onions,black pepper&sugar, biol for about 5-6mins
  • 4 Pour liquid over mussels garnish with parley
  • enjoy
