Ingredients
  • 3 doz mussels
  • 2 spring onions sliced
  • 2 cups coconut milk
  • Black pepper
  • 1/4cup finely chopped parsley
  • 2tsp lemon grass
  • 2tsp crushed chilli
  • 1tsp crushed ginger
  • 1tsp brown suger

Directions
  1. 1 Place coconut milk,lemon grass,chilli & ginger in Wok,bring to the boil.Turn to low heat,simmer 3 mins.
  2. 2 Add mussels cover with lid simmer further4-5mins.When opened they are ready. Remove mussels & keep warm
  3. 3 Bring remaining liquid back to boil.Add spring onions,black pepper&sugar, biol for about 5-6mins
  4. 4 Pour liquid over mussels garnish with parley
  5. enjoy
