How to make it

  • CRUST
  • 2 C rolled graham cracker crumbs
  • 1/2 C sugar
  • 1 t. cinnamon
  • 1/2 C melted butter
  • Mix all ingredients well. Grease sides of cheesecake pan. Pat crust on to bottom & sides. Place in oven for about 10 minutes
  • FILLING.
  • 1/2 C sugar
  • 2 T. flour
  • 1/4 t. salt
  • 2-8oz. pkg. cream cheese
  • 1 t. vanilla
  • 4 eggs, separated
  • 1 C. heavy cream
  • Blend the 1/2 C sugar and & flour, salt & room temperature cream cheese. Add the vanilla & yolks, one at a time,mixing well after each yolk is added. Add the cream & blend thoroughly. Fold in stiffly beaten egg whites & pour the mixture on the top of the crumbs. Bake in a slow oven 325 F for one hour or untill set in center. Cool on cooling rack before removing rim.
  • TOPPING
  • In sauce pan bring cheeries, juice and 2 T sugar to boil. Add 2 T cornstarch to a bit of juice stir in to thicken cherry mixture. Poor over cooled cheese cake.... ENJOY
