Balsamic Glazed Chicken Breast With Tomato Basil Linguine Recipe
I created this dish to mimic one of my husband's favorite dine-out dishes. This is easy on paper, but takes some coordination in the kitchen.

Ingredients
  • 4 boneless, skinless chicken breasts
  • 1-1 1/2 C. balsamic vinegar
  • 1 tsp. olive oil
  • 2 cloves garlic, minced
  • 2 cans diced tomatoes
  • 1 bunch fresh basil
  • black pepper to taste
  • linguine

Directions
  1. Bake or grill ( I use my handy George Foreman grill) chicken until fully cooked.
  2. Meanwhile, place vinegar in a med. saute pan and heat over medium. The goal is to reduce the vinegar to a light syrup consistency, but not to burn it.
  3. In a second med. sauce pan, heated over medium, add oil and garlic.
  4. Cook garlic for 1 min.
  5. Stir into garlic pan the chopped tomatoes with juice and black pepper.
  6. Reduce heat and simmer uncovered.
  7. Once chicken is cooked and vinegar is syrup-like, add chicken to the vinegar and cook for 2-4 min. per side, allowing the meat to soak in the sauce.
  8. Add fresh, sliced basil to the tomato sauce just before serving.
  9. Slice chicken and drizzle with remaining vinegar.
  10. Serve with linguine and tomato basil sauce.
