How to make it

  • Heat oven to 300 - 325 degrees F.
  • Crush the graham wafers into crumbs. (I put the wafers in a plastic bag, 4 at a time, and crush them by rolling over them with a rolling pin using good downward pressure)
  • Add butter to the crumbs and mix together well.
  • Place half the crumb mixture (as evenly as possible) on the bottom of an 8 X 12 inch glass baking pan.
  • Mix together the cream cheese; sour cream; sugar; egg yolks; lemon juice and rind.
  • In another bowl beat the egg whites separately until stiff but not dry.
  • Fold the two mixtures together -- gently but thoroughly. (I told you they'd get back together again!)
  • Pour the mixture into the baking pan and sprinkle with the remainder of the graham wafer crumbs.
  • Bake for approximately 1 hour; until golden brown.
  • Cool.
