The amount of chiles is your choice..I like it hot. The flavors just float up to meet you with this recipe.I am really getting more and more intrigued with Thai food...so many variations.

Ingredients
  • 2 c. chicken
  • 1 qt.coconut milk
  • 1 tomato
  • large onion
  • 5 tbsp Siamese ginger or galangal
  • 1 clump lemon grass
  • 2 kaffir lime leaves
  • 3-5 red dried chillies, or fresh chillies
  • 1 c. straw mushrooms
  • 4 tbsp. fish sauce
  • 1 lime, chopped in quarters
  • 1/2 tbsp. sugar
  • 1 sprig spring onion or coriander leaf

Directions
  1. Heat coconut milk gently in wok over low flame.
  2. Put the lemon grass and ginger in wok, bring to boil.
  3. Add chicken, wait one minute,(important) then stir.
  4. Add fish sauce, sugar and squeeze 3 pieces of lime.
  5. Add large onion, tomato, kaffir lime leaves mushrooms,
  6. Test it and add fish sauce, sugar and lime juice according to taste.
  7. Serve in dish and top with chopped chillies and spring onion.

This is our (hubby and self) favorite Thai soup. We order it with chicken and prawns. Like you said the flavors just rise up to meet you. Its my favorite type of food. I bought a Thai cook book once. Wow is it involved! I don't know where to get half the ingrediants.!
