Garam Masala Seasoning

- 3 parts dried cardamom seed shopping list
- 3 parts dried coriander seeds shopping list
- 2 parts dried black peppercorns shopping list
- 1 part dried cumin seeds shopping list
- 1 part dried clove buds shopping list
- 1/2 part grated nutmeg shopping list
- 1 2-inch stick of cinnamon; broken-up shopping list
How to make it
- Heat all the ingredients in a 300°F oven for 15 minutes. Or dry roast in a cast iron pan until the ingredients turns to a nice brown. Shake the spices as you roast them to prevent burning.
- Grind fine in a spice mill and store in airtight spice container.

I wish I had come across some of your homemade seasonings before -- like about 2 years ago! I, too, had to pay the 'big bucks' to get some garam masala (and Herbes de Provence) that were evenly remotely what I thought to be up to par....
