Mums Pumpkin Soup Recipe

Ingredients

1.5kgs Pumpkin

60 gr butter

1 large onion

1 tbs flour

5 cups water

chicken stock cube

1 carton sour cream

1 cup hot milk

6 tbs cream

salt & peper to taste

Directions

Peel and cut pumpkin

Melt butter add onion and pumpkin cover 10 min

Add water and stock cook till tender

Cool slightly then puree (hand held works fine!)

Grad add the milk. (5min)

Sift flour into sour cream and add to soup

season with salt and peper

serve hot

garnish with either 1 tbs cream or sour cream

(chives are an optional garnish too!)
