Lentils With Mint Cider And Ginger Recipe
Adapted from Kitchen Garden 3/96 Quick, easy, delicious Good on it's own or as a side

Ingredients
  • 1 cup lentils
  • 1 tbsp olive oil (original recipe used diced bacon and cooked it first to get fat)
  • 1 tsp minced garlic
  • 1 tbsp minged ginger
  • 1/4 cup finely diced onion
  • 1/2 cup finely diced carrot (I just slice baby carrots)
  • 1 cup apple cider (I use alcoholic cider)
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • pinch of sugar
  • 1/4 tsp ground cumin
  • 2 tbsp sherry vinegar or wine vinegar
  • 1/2 cup chopped mint

Directions
  1. Bring a large saucepan of water to the boil, salt and add lentils.
  2. Boil until just tender (~20 mins).
  3. Drain, rinse under cold water, drain.
  4. Heat the oil over medium.
  5. Add garlic, ginger, onion, carrots, and cook for 3 mins.
  6. Add lentils, cider, and salt, and cook over low heat until liquid is absorbed (~10 mins), stirring occasionally.
  7. Stir in the rest of the ingredients, and then serve.

Wow, this looks great! I think I'll try it this weekend. DO you have a suggestion as to which type of lentils? (green, red, brown, etc.)

Also, when you say alcoholic cider, do you mean like a cider-type beer?
