How to make it

  • Bring a large saucepan of water to the boil, salt and add lentils.
  • Boil until just tender (~20 mins).
  • Drain, rinse under cold water, drain.
  • Heat the oil over medium.
  • Add garlic, ginger, onion, carrots, and cook for 3 mins.
  • Add lentils, cider, and salt, and cook over low heat until liquid is absorbed (~10 mins), stirring occasionally.
  • Stir in the rest of the ingredients, and then serve.

    Wow, this looks great! I think I'll try it this weekend. DO you have a suggestion as to which type of lentils? (green, red, brown, etc.)

    Also, when you say alcoholic cider, do you mean like a cider-type beer?
