How to make it

  • Place the head and/or shells in the water; add the other ingredients. Bring to a boil, reduce heat and simmer for 20 to 30 minutes.
  • The oil should help prevent excessive foaming and boiling-over; but watch carefully. Strain stock into covered containers and refrigerate until needed. Discard heads and/or shells.
  • Use in soups and sauces that call for shrimp stock.
