Basic Shrimp Stock

- 6 cups water shopping list
- 1 teaspoon olive oil shopping list
- 1 lb shrimp shells and/or heads shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon whole black peppercorns shopping list
- 1 dried bay leaf shopping list
- 1 tablespoon parsley shopping list
- 3 tablespoons onion; chopped shopping list
How to make it
- Place the head and/or shells in the water; add the other ingredients. Bring to a boil, reduce heat and simmer for 20 to 30 minutes.
- The oil should help prevent excessive foaming and boiling-over; but watch carefully. Strain stock into covered containers and refrigerate until needed. Discard heads and/or shells.
- Use in soups and sauces that call for shrimp stock.
