How to make it

  • Bring the water to a boil.
  • Place the vegetables, onions, carrot and celery in the water and return to a boil. Reduce heat and simmer for 45 minutes.
  • Add the salt, white pepper and thyme and simmer for 15 minutes more.
  • Strain the stock and refrigerate until needed.
  • * Note: Vegetables can be any appropriate choice. Clean vegetable trimmings and ends may be saved frozen until a sufficient amount to make stock has been saved. Parts of vegetables that you may not want to serve might make an excellent stock.
