How to make it

  • Mix together the marinade ingredients. Set aside 2 Tbsp of marinade for brushing on while grilling.
  • Cut the meat into bite-sized cubes.
  • Place the meat in the marinade, cover, and refrigerate for at least two hours, stirring occasionally.
  • Cut the pineapple into bite sized chunks.
  • Place the meat and pineapple chunks/pepper/onion/tomato alternately on water-soaked skewers.
  • Grill or broil your Niskabobs until done, about 10-15 minutes, turning occasionally and brushing with reserved marinade.
  • Note: these are good with beef and pork, too, and can be made indoors on a grill pan, as well!
