Grilled Tropical Niskabobs

- Marinade: shopping list
- 2 tablespoons white vinegar or cider vinegar shopping list
- 1 tablespoon lime juice shopping list
- 1 tablespoon pineapple juice (listed below) shopping list
- 3 tablespoons soy sauce shopping list
- 1 tablespoon sesame oil shopping list
- 2 to 3 dashes hot sauce, to taste shopping list
- 2 tablespoons mustard, sweet & hot shopping list
- 3 tablespoons chunky peanut butter shopping list
- 2 garlic cloves, crushed shopping list
- 1/2 teaspoon ground cumin shopping list
- 1/4 teaspoon black pepper shopping list
- 2 tablespoons dry sherry shopping list
- Kabobs: shopping list
- 1 1/4 lbs turkey or chicken breast shopping list
- 1 1/2 cups pineapple chunks, fresh or canned shopping list
- 1 red sweet bell pepper, cut into 1 inch squares shopping list
- 1/2 onion, cut into 1 inch squares shopping list
- cherry tomatoes shopping list
- bamboo skewers, soaked in water before grilling shopping list
How to make it
- Mix together the marinade ingredients. Set aside 2 Tbsp of marinade for brushing on while grilling.
- Cut the meat into bite-sized cubes.
- Place the meat in the marinade, cover, and refrigerate for at least two hours, stirring occasionally.
- Cut the pineapple into bite sized chunks.
- Place the meat and pineapple chunks/pepper/onion/tomato alternately on water-soaked skewers.
- Grill or broil your Niskabobs until done, about 10-15 minutes, turning occasionally and brushing with reserved marinade.
- Note: these are good with beef and pork, too, and can be made indoors on a grill pan, as well!
