Rice Patties with Mushroom Sauce

- For patties: shopping list
- 1 1/4 c cooked rice, warmed up shopping list
- 1/4 c onion, chopped shopping list
- 1/4 c red pepper, chopped finely shopping list
- 1/4 c seasoned bread crumbs (dry) shopping list
- 1 egg shopping list
- 1/8 tsp cayenned pepper shopping list
- 2 tbsp vegetable oil shopping list
- Sauce: shopping list
- 1 tbsp butter shopping list
- 1 c fresh mushrooms, sliced shopping list
- 1/4 c green onions, sliced shopping list
- 2 tbsp flour shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1 c beef broth shopping list
- 1/4 c chopped toasted walnuts shopping list
How to make it
- For the patties:
- Combine all patty ingredients (except veg. oil) in a large bowl and form into 4 patties about 3/4 inch thick.
- Cover and refrigerate for an hour.
- In a large frying pan heat oil over medium heat then cook patties in the oil for about 3 minutes per side or until golden. Set aside but keep warm.
- Meanwhile, in a medium size saucepan, melt the butter then add mushrooms and green onions. Cook until veggies are softened, about 3 minutes.
- Stir in the flour, salt, and pepper. Cook for 1 minute then stir in the broth.
- Cook, stirring constantly, until thickened then stir in the walnuts.
- Serve the sauce over the rice patties.
