Classic spaghetti Carbonara

- 2 rashers of smoked bacon shopping list
- 1 small onion, finely chopped (optional) shopping list
- 6oz (175g) dried spaghetti shopping list
- 1 large egg shopping list
- 1oz (25g) good quality parmesan, grated shopping list
- 1.25 cups (300ml) double cream shopping list
How to make it
- In a frying pan, heat up a drizzle of olive oil to a meadium heat and fry the bacon and onion for 6 minutes. I love having onion in this, but feel free to leave it out.
- Cook the spaghetti in boiling salted water, as per pack instructions.
- Gently beat the egg into the cream, and stir in the grated parmesan cheese. Add a pinch of pepper.
- Once the spaghetti is cooked, mix in the onion and bacon, and then toss the spaghetti rapidly with the egg/cream/cheese mixture. The heat from the pasta wll cook the egg and you will have a lovely thick rich sauce. Keep it moving for a minute so you don't get scrambled egg.
- Serve.
