How to make it

  • In a frying pan, heat up a drizzle of olive oil to a meadium heat and fry the bacon and onion for 6 minutes. I love having onion in this, but feel free to leave it out.
  • Cook the spaghetti in boiling salted water, as per pack instructions.
  • Gently beat the egg into the cream, and stir in the grated parmesan cheese. Add a pinch of pepper.
  • Once the spaghetti is cooked, mix in the onion and bacon, and then toss the spaghetti rapidly with the egg/cream/cheese mixture. The heat from the pasta wll cook the egg and you will have a lovely thick rich sauce. Keep it moving for a minute so you don't get scrambled egg.
  • Serve.

    We're not able to get the really good bacon rashers over here (Canada), so I often used double-smoked (streaky, as you call it) bacon, or chopped proscuitto. Canadian back bacon works too, whatever I have at hand. I make this all the time at home! Thanks for the post.
