Sticky Date Pudding

- 200g pitted dates, chopped shopping list
- 1 tspn baking soda shopping list
- 330ml boiling water shopping list
- 80g butter, softened shopping list
- 3/4 cup firmly packed brown sugar shopping list
- 2 eggs, lightly beaten shopping list
- 1 tspn vanilla essence shopping list
- 1 3/4 cups self raising flour shopping list
- 1/2 tspn cinnamon shopping list
- 1 tspn finely grated orange shopping list
- caramel sauce shopping list
- 3/4 cup firmly packed brown sugar shopping list
- 1 cup pure cream shopping list
- 100g butter, chopped shopping list
How to make it
- Preheat oven to 180C
- Place dates in bowl with soda and pour over boiling water. Stand until slightly cooled.
- Combine flour, cinnamon and orange rind and set aside.
- Beat butter and sugar until light and creamy.
- Add eggs one by one beating well after each addition.
- Add vanilla.
- Fold in flour mix alternately with date mix until combined.
- Pour into prepared 8" springform cake tin.
- Bake for 30 - 35 minutes.
- Caramel Sauce:
- In a small saucepan simmer ingredients for 2 - 3 minutes until thicked slightly.
- Spoon a small amount of sauce onto cooked cake and return to oven for 2 minutes.
- Serve warm with remaining caramel sauce.
