Sticky Date Pudding Recipe
Sometimes called Sticky Toffee Pudding this is a rich, moist dessert cake served with a creamy caramel sauce. Excellent comfort food!

Ingredients
  • 200g pitted dates, chopped
  • 1 tspn baking soda
  • 330ml boiling water
  • 80g butter, softened
  • 3/4 cup firmly packed brown sugar
  • 2 eggs, lightly beaten
  • 1 tspn vanilla essence
  • 1 3/4 cups self raising flour
  • 1/2 tspn cinnamon
  • 1 tspn finely grated orange
  • CARAMEL SAUCE
  • 3/4 cup firmly packed brown sugar
  • 1 cup pure cream
  • 100g butter, chopped

Directions
  1. Preheat oven to 180C
  2. Place dates in bowl with soda and pour over boiling water. Stand until slightly cooled.
  3. Combine flour, cinnamon and orange rind and set aside.
  4. Beat butter and sugar until light and creamy.
  5. Add eggs one by one beating well after each addition.
  6. Add vanilla.
  7. Fold in flour mix alternately with date mix until combined.
  8. Pour into prepared 8" springform cake tin.
  9. Bake for 30 - 35 minutes.
  10. Caramel Sauce:
  11. In a small saucepan simmer ingredients for 2 - 3 minutes until thicked slightly.
  12. Spoon a small amount of sauce onto cooked cake and return to oven for 2 minutes.
  13. Serve warm with remaining caramel sauce.
