Jamaican Paw Paw Relish Recipe
This is a fantastic new taste from Jamaica. An extrodinary relish of tropical fruit and other goodies.The Jamaicans call it their name for papaya, "Paw-Paw" Relish.

Ingredients
  • 2 teaspoon balsamic vinegar
  • 1 tablespoon lime juice
  • 1/2 teaspoon minced garlic cloves
  • 1/2 teaspoon crushed chili de arbol
  • 1/2 teaspoon fine ground coriander
  • 1/2 teaspoon salt
  • 1/2 teaspoon fine ground white pepper
  • 3 tablespoons peanut oil
  • 1 cup finely chopped red bell pepper
  • 2 cups peeled, seeded, diced papaya
  • 1/4 cup chopped cilantro leaves
  • 1/2 cup finely chopped red onion
  • 1/4 cup fresh, washed, whole papaya seeds

Directions
  1. Make the dressing by combining the vinegar, lime juice, garlic, chile, ground coriander, salt and pepper with oil and shaking vigorously.
  2. Place the chopped bell pepper, diced papaya, red onion and chopped cilantro in a dish and toss to mix.
  3. Pour on the dressing, toss and sprinkle on the whole papaya seeds. Gently fold them into the relish.
  4. Refrigerate in a covered dish for at least an hour. Gently stir once or twice.
  5. Note: This is a Jamaican recipe similar to Papaya Salsa from Mexico.
