How to make it

  • Do ahead;
  • In a small bowl combine butter, oj concentrate, wine vinegarand saffron until blended.
  • Season with salt & pepper, cover & chill 23 hours.
  • Cut diagonal slits on each side of fish at 1" intervals.
  • Arrange fish in a baking dish and fill each cavity with sliced orange.
  • Sprinkle inside and out with orange juice.
  • Cover at room temp for 1 hour.
  • Spray the fish and the grill with non-stick spray.
  • Grill on medium-high heat basting constantly with orange mixture.
  • Grill about 5 inutes or until opaque in the center.
  • Serve right away.
