Ingredients
  • 1/2 C butter
  • 3T frozen orange juice concentrate, thawed
  • 1/2 tsp white wine vinegar
  • Generous pinch of saffron trhead
  • Sea salt
  • 6 striped bass (or trout) whole dressed
  • 1 large naval orange, juiced
  • 1 large orange sliced thin
  • veggie oil spray

Directions
  1. Do ahead;
  2. In a small bowl combine butter, oj concentrate, wine vinegarand saffron until blended.
  3. Season with salt & pepper, cover & chill 23 hours.
  4. Cut diagonal slits on each side of fish at 1" intervals.
  5. Arrange fish in a baking dish and fill each cavity with sliced orange.
  6. Sprinkle inside and out with orange juice.
  7. Cover at room temp for 1 hour.
  8. Spray the fish and the grill with non-stick spray.
  9. Grill on medium-high heat basting constantly with orange mixture.
  10. Grill about 5 inutes or until opaque in the center.
  11. Serve right away.
