Orange Saffron Grilled Striped Bass

- 1/2 C butter shopping list
- 3T frozen orange juice concentrate, thawed shopping list
- 1/2 tsp white wine vinegar shopping list
- Generous pinch of saffron trhead shopping list
- sea salt shopping list
- 6 striped bass (or trout) whole dressed shopping list
- 1 large naval orange, juiced shopping list
- 1 large orange sliced thin shopping list
- veggie oil spray shopping list
How to make it
- Do ahead;
- In a small bowl combine butter, oj concentrate, wine vinegarand saffron until blended.
- Season with salt & pepper, cover & chill 23 hours.
- Cut diagonal slits on each side of fish at 1" intervals.
- Arrange fish in a baking dish and fill each cavity with sliced orange.
- Sprinkle inside and out with orange juice.
- Cover at room temp for 1 hour.
- Spray the fish and the grill with non-stick spray.
- Grill on medium-high heat basting constantly with orange mixture.
- Grill about 5 inutes or until opaque in the center.
- Serve right away.
