Apricot Macaroni Salad Recipe

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boswell Estate in Arlington, Texas in 1984.

Ingredients
- 8 ounce package macaroni
- 20 ounce can pineapple chunks drained
- 1/2 cup chopped red pepper
- 1/2 cup shredded cheddar cheese
- 2/3 cup mayonnaise
- 1/2 cup apricot preserves
Directions
- Cook macaroni according to package directions then drain and cool.
- Combine macaroni, pineapple, pepper and cheese in medium bowl.
- Mix mayonnaise and preserves then mix into salad.
- Refrigerate one hour before serving.

Different! Have you tried. I'd be interested in how the acid in the pineapple melds with the mayo and cheese. I have a potluck I am going to this Saturday -- just wondering what to bring. ???
