Pumpkin Soup

- 1/4 cup green pepper, chopped shopping list
- 2 tbsp onion, chopped shopping list
- 1 tsp parsley flakes or fresh parsley , minced shopping list
- 1/8 tsp. thyme leaves shopping list
- 1 bay leaf shopping list
- 1/4 water shopping list
- 1 can( 9 oz.) canned tomatoes shopping list
- 2 cups pumpkin or winter squash, cooked and mashed shopping list
- 2 cups water shopping list
- 2 low sodium chicken bouillon cubes shopping list
- 1 tbsp flour shopping list
- 2 cups skim soy milk shopping list
- 1 tsp salt shopping list
- 1/8 tsp pepper shopping list
How to make it
- In a dutch oven, saute pepper, onion. parsley, thyme and bay leaf in water 5 minutes;do not brown
- Add tomatoes, pumpkin or squash, water and bring to a boil
- reduce heat, simmer 30 minutes, stirring occasionally
- in a small bowl, combine flour and milk, blend well
- Stir into soup mixture; add salt and pepper
- Cook over medium heat, stirring frequently untill mixture boils
- remove bay leaf and serve
